Best EVER Banana Bread








Who doesn't like banana bread? Me, actually. I have never liked banana bread until I made my own...and added chocolate! I have made this banana bread for many people, and get asked to make it often. It is delicious, with the perfect amount of banana. It is a super easy, and super basic recipe, with big results! I have never been a baker. I actually didn't start baking until I was pregnant, and quarantined, and learned that I could actually bake. I had always tried to bake when we lived in Colorado, and I was never successful.


We lived in the mountains, in a small and wonderful town called Nederland, about 20 miles west of Boulder. Anytime I tried to bake anything, it was a major fail, even when I followed to directions for living above 6,000ft. I wrote off baking as a skill I would never have. Turns out I can definitely bake. I am actually kind of good at it. Now I blame the elevation, lol.


Let's get to it, eh?




Ingredients:

  • 3 or 4 ripe bananas

  • 2 cups of flour

  • 1 teaspoon of baking soda

  • 1/4 teaspoon of salt

  • 1/2 cup, or one stick, of butter, room temp

  • 3/4 cup of brown sugar, packed

  • 2 eggs, beaten

  • optional: chocolate chips, walnuts, cinnamon, honey, vanilla, etc

  1. Preheat oven to 350 degrees

  2. Grease a bread pan with butter, crisco, coconut oil, or your greasy substance of choice

  3. In a largeish bowl, combine the 2 cups of flour, the 1/4 tsp of salt, and the 1 tsp of baking soda. All dry ingredients go together.

  4. In a slightly smaller bowl, combine the stick of butter, with the 3/4 cup brown sugar.

  5. (Now you have two options here, you can get another bowl for this part, or be a lazy baker like me, and just use the bowl with the brown sugar mixture already in it.) In the same bowl, add the two eggs. combine.

  6. Add your 3 or 4 bananas to the brown sugar bowl, and mash. Mix well.

  7. Add your wet ingredients (brown sugar bowl, as I've been calling it) to the largish bowl full of your dry ingredients.

  8. Mix well, but don't over mix. All flour should be mixed in.

  9. Here you can add your extra add-ins if you'd like! Chocolate is my go to.

  10. Pour into greased bread pan

  11. Bake in the preheated oven for 60-70 minutes, or until a toothpick can be inserted, and removed, without any residue.

  12. Let cool, and eat warm!
